27 Ingredient Chili Con Carne
Over the years, we have amassed a large collection of Dutch oven recipes, and we enjoy sharing them
with others who appreciate this form of cast iron cooking. The popularity of Dutch oven cooking has increased
greatly over the past several years as many people discover the benefits of using these cast iron pots and
associated pieces of cast iron cookware. Most of our recipes can be used for indoor cooking in your oven or
outdoors in a more traditional campfire setting.
You can double and multiply this recipe to accommodate a huge and large group. Best dish for potlucks and
dinner parties. Simple and very easy to prepare and if you're short on time, you can also substitute the dry pinto
beans for already prepared canned bean.
Ingredients:
1 lb Pork sausage
1 lb Dry pinto beans
1 lb Can of baked beans
4 oz Can pimientos
2 can Tomatoes (30 oz size)
1/2 c Butter; or margarine
2 Onions; medium; chopped
7 oz Can of diced green chilies
2 Cloves of garlic; minced
3 lb Chopped sirloin
2 tablespoons flour
3/4 c Celery; chopped
1/2 lb Fresh mushrooms; sliced
1/2 c Sweet red pepper; chopped
1/2 c Green pepper; chopped
9 oz Pitted ripe olives; chopped
1/2 c Parsley; minced
12 oz Bottle of chili sauce
1 tablespoon Salt
1 tablespoons Garlic salt
2 tablespoons Black pepper
1 tablespoons Cilantro; chopped
1 tablespoon Oregano
4 tablespoons Chili powder; more or less to taste
Grated orange peel
1 pt Sour cream
Water to cover
Cooking Instructions:
Prep time: 15 minutes Cooking time: approximately 3 hours
Cooking Steps:
- Wash and drain then soak the pinto beans in water overnight.
- Cook and bring into a boil then lower the heat and let it simmer for about 2 to 3 hours or until
tender. Drain.
- Meanwhile using large skillet melts the butter and adds onions, chilies, garlic and saute until the
onions are translucent.
- Add chopped sirloin and cook over moderate heat until meat is brown.
- In a separate pan, cook and brown the sausage then get rid of the excess fat. Add the sausage to the
meat mixture and mix with flour then stir to blend.
- Transfer to a large Dutch oven; add pinto and canned beans and all remaining ingredients except sour
cream then bring into a boil.
- Reduce the heat and let it simmer for 30 minutes. Get rid off the bubbles and fats as it rises to the
top.
- Serve with sour cream.
