Arkansas Poke Greens
Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that

poke shoots.
Ingredients:
1 1/2 lb Fresh, young poke shoots
Salt and pepper to taste
8 Slices bacon
6 Eggs, beaten
Instructions:
Prep time: 10 minutes
Cooking time: 45 minutes
Cooking Steps:
- Clean the poke shoots careful through running water, get rid of that pulpy
stems and spots on leaves then drain well.
- In an 8-quart Dutch oven put the poke shoots and water to cover then bring
into a boil.
- Reduce the heat cove and let it simmer for about 30 minutes or until the
shoots are tender, drain and chop then set aside.
- In a small skillet cook the bacon until brown and crisp, reserve the bacon
drippings for later use.
- Crumble the bacon and return to the pan with drippings and add the chopped
poke shoots and let it cook for about 15 minutes over medium heat.
- Add the eggs and stir frequently until the eggs are firm, then season with
salt and pepper.
