Baked Polenta with Fontina Cheese
Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that
this type of cookware is capable of producing an amazing array of delicious meals. We have collected many

A quick baked polenta topped with Fontina cheese, very easy to make and great the next day too (and the
day after that!) It makes a great side dish for grilled chicken or pork chops, a must-have in your recipe
box.
Ingredients:
1 lb Fontina cheese
1/2 c Whipping cream
4 teaspoons dried marjoram
2 1/2 cup Yellow cornmeal
4 3/4 cup Water
2 14 1/2 oz. cans chicken broth
5 minced shallots
Cooking Instructions:
Prep time: 15 minutes
Cooking time: 1 hour and 25 minutes
Cooking Steps:
- Grease with butter your 9 x 13 inch baking dish.
- Using a large Dutch oven, mix together 2 ? cups of water, broth, shallots, marjoram and bring into a
boil.
- In a mixing bowl mix together 2 ½ cups of cold water and cornmeal then add the mixture to the Dutch
oven. Return to boil and stir frequently.
- Reduce the heat then let it boil gently for about 10 minutes or until the polenta is very thick. Add
salt and pepper to taste.
- Place 2 cups polenta in the prepared baking dish, top with 1 3/4 cups cheese and drizzle with 1/4 cup
cream. Repeat the process of layering then spread the remaining cheese on top.
- Cover with foil. Pre-heat the oven to 350 degrees F, cover and bake the polenta for about 1 hour and
15 minutes.
- Remove the cover and continue baking for 10 minutes more or until the polenta bubbles and begin to
brown.
- Serve.
