Beef Korma
Over the years, we have amassed a large collection of Dutch oven recipes, and we enjoy sharing them
with others who appreciate this form of cast iron cooking. The popularity of Dutch oven cooking has increased
greatly over the past several years as many people discover the benefits of using these cast iron pots and
associated pieces of cast iron cookware. Most of our recipes can be used for indoor cooking in your oven or
outdoors in a more traditional campfire setting.
This meal will turn into an instant hit with your whole family; the spice mix doesn't take that long to
mix up and it really makes the dish. The flavor is great and you will certainly make this as a routine; best with
Indian Spiced Rice or hot cooked rice.
Ingredients:
2 lb Beef or lamb stewing meat, cut into 1-inch cube
1/4 c Blanched slivered almonds
1/4 teaspoon Garam masala
2 tablespoon Snipped coriander or parsley
3/4 c Whipping cream
1/2 c Plain yogurt
1 tablespoon Coriander seed
1 tablespoon Cumin seed
1 tablespoon Cardamom seed (without pods)
1 teaspoon Crushed red pepper
6 Whole cloves
8 Cloves garlic
2 md Onions; thinly sliced & separated in rings
1 tablespoon Gingerroot; coarsely chopped
1 1/2 teaspoon Salt
1/2 teaspoon Ground cinnamon
1 tablespoon Cooking oil
2 tablespoons Cooking oil
2 tablespoons All-purpose flour
Indian spiced rice or hot cooked rice
1/3 c Water
1/2 c Water
Cooking Instructions:
Prep time: 20 minutes
Cooking time: 2 hours
Cooking Steps:
- Using a blender or food processor combine together the coriander seed, cumin seed, cardamom seed,
crushed red pepper, and whole cloves. Grind the spices until fine powder.
- The add 1/3 cup of water, almonds, garlic cloves, ground cinnamon, gingerroot and salt. Cover and let
it blend until the mixture become paste.
- Using a 4 quart Dutch oven heat 1 tablespoon of oil and cook the meat until browned. Remove and
repeat with the remaining meat, add oil if necessary.
- Using a saucepan heat 2 tablespoons of oil and saute onions over medium-high heat for about 8 to 10
minutes or until onions are lightly brown,
- Reduce the heat and add the mixture of spices, stir and let it cook for about 3 to 4 minutes until
browned.
- Add the meat and ½ cup water in the saucepan. Cover and let it simmer for about 1 ½ to 1 ? hours or
until the meat is tender.
- Meanwhile combine together the whipping cream, yogurt, flour, and garam masala then stir in the
mixture into Dutch oven. Cook and stir until thickened and bubbly.
- Transfer to serving bowl and serve.
