Braised Collards with Caramelized Onions

4 lb Collard greens; washed, stems removed, and cut into 1/2 inch pieces
2 tablespoons unsalted butter
3 Cloves roasted garlic; finely chopped
2 c Chicken stock
1 tablespoon Olive oil
2 large Onions; thinly sliced
1 teaspoon Hot red pepper flakes
1 tablespoon Salt
Prep time: 10 minutes
Cooking time: 40 minutes
- In large Dutch oven melt the butter and oil over medium heat. Add and saute
the onions for about 10 minutes or until tender. Cover.
- Remove the cover and continue cooking for a few minutes more until brown and
- Add the garlic and cook for 1 minute.
- Add the collard greens, stock, salt, red pepper flakes, cover and let it cook
for about 30 minutes over medium-high heat until tender.
