Carne Guisada Con Papas

A rich amount of tomato puree peps up this simple, flavor-rich pork stew. Sweet potatoes saute together
with stock help to mop up every bit of the full-flavored sauce, and turn the stew into a well-balanced meal in a
bowl. Simple and easy, all ingredients are already in your kitchen.
Ingredients:
2 lb Pork; up to 3
Chicken stock or water
Onions
Tomato puree
Potatoes
Chile powder
Garlic
Cumin
Salt
Oil
Cooking Instructions:
Prep time: 5 minutes
Cooking time: 25 minutes
Cooking Steps:
- Using a large Dutch oven heat oil then cook the pork until slightly
browned.
- Add and saute together with the
onions.
- Add the potatoes then stir in the chicken stock, tomato puree, garlic, chili,
cumin, salt and stir very well. (Heavy on the cumin, lighter on the chili powder is a good
combo).
- Let it cook until tender and the sauce has the enough
thickness.
