Chunky Beef Chili

Over the years, we have amassed a large collection of Dutch oven recipes, and we enjoy sharing them with others who appreciate this form of cast iron cooking. The popularity of Dutch oven cooking has increased greatly over the past several years as many people discover the benefits of using these cast iron pots and associated pieces of cast iron cookware. Most of our recipes can be used for indoor cooking in your oven or outdoors in a more traditional campfire setting.

A chunk of beef that turns into scrumptious chili dish; the perfect combination for beef and chili lovers! Best served in a bread bowl or with fresh warm bread on the side to dig into; serve now and you’ll be surprise how fast this dish disappears!

Ingredients:

2 tablespoons Oil 2 1/2 lb Beef chuck; boneless -- cut 1/2 " pieces
Black beans -- rinsed drained
Sour cream
2 can Tomatoes -- whole peeled 14 1/2 oz ea
6 oz Tomato paste – can
Avocado – diced
Jalapeno pepper – sliced
3 tablespoons Chili powder
1 c Onion -- coarse chopped
1 c Green pepper -- chopped
20 ml Garlic -- crushed
1 teaspoon Dried oregano leaves
1/2 teaspoon Grushed red pepper -- to taste
Shredded lettuce
Shredded cheese
Green onion -- sliced
Cilantro leaves
1 teaspoon Salt

Cooking Instructions:

Prep time: 10 minutes
Cooking time: 1 hour and 30 minutes

Cooking Steps:

  • In large Dutch oven heat oil over medium-high heat then add the beef, green pepper, onion, garlic and let it cook until beef is browned. Stir frequently and discard the drippings.
  • Season the beef with salt.
  • Add the tomatoes with juices, tomato paste, chili powder, oregano and crushed pepper.
  • Cover with the lid then reduce the heat to low and let it simmer for about 1 ½ hours until beef is tender]
  • Serve with your favorite toppings.
