Delectable Beef and Vegetable Ragout

Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that this type of cookware is capable of producing an amazing array of delicious meals.  We have collected many Dutch oven recipes over the years and we hope you will use them to create some great meals for your family and friends.

This is another exquisite recipe for cooking aficionado everywhere. This light flavors but extremely filling dish is very simple-to-follow recipe which you can use daily. Fantastic served with some fresh, crusty French bread to sop up the sauce, this will definitely a hit to your whole family!

Ingredients:

2 lb Beef Brisket
1 ½ lb Carrots; Cut In ½” Slices
½ lb Red Potatoes; Cut In ½” Cubes
4 c Leeks; Thinly Sliced
2 c Mushrooms; Halved
1 ts Beef Bouillon Cube
2 Garlic Cloves; Minced
½ ts Pepper
1/4 ts Salt
1 ts Vegetable Oil
1 ½ c Water
12 oz Beer
Vegetable Cooking Spray

Cooking Instructions:

Prep time: 10 minutes
Cooking time:  1 hour 40 minutes

Cooking Steps:

  • Cut your brisket into 1 inch cubes, trim the fat.
  • Get your Dutch oven and coat with vegetable cooking spray, add the oil and place over medium-high heat. Add and cook your brisket for about 3 to 4 minutes or until browned. Remove the brisket to paper towels to drain the oil. 
  • Bring back the brisket to the Dutch oven and add water. Add the water, beef bouillon cube, pepper, salt, garlic, beer and mix careful then bring to a boil. Reduce the heat, cover and let it simmer for about 1 hour. 
  • Add the carrots and potatoes then cover and simmer for 2 hours until the vegetables are soft.
  • Add leeks and mushrooms; cover and simmer an additional 30 minutes or until the brisket is soft and tender.
  • Serve hot
