Fresh Lamb Casserole
Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that
this type of cookware is capable of producing an amazing array of delicious meals. We have collected many

This casserole of fresh lamb is definitely a big hit! Best served with fresh crusty bread and potatoes or
over hot rice; a terrific stew for every one! Hint: cook the lamb shank in water, boil it until it's falling off
the bone. Then drain and set aside the stock, and replace the chicken stock with the lamb stock.
Ingredients:
6 links halved pork sausage links
2 (15 ounce) cans cannellini beans, drained and rinsed
2 pounds cooked and diced lamb shank
1 pound cubed ham steak
5 tomatoes - blanched, peeled and chopped
2 sprigs fresh parsley
2 sprigs fresh thyme
2 bay leaves
10 small onions
2 cloves garlic, chopped
4 cups chicken stock
Cooking Instructions:
Prep time: 25 minutes
Cooking time: 60 minutes
Cooking Steps:
- Create an herb bundle; tie the springs of parsley, bay leaves, thyme together in cheesecloth and tie
it close.
- Heat your large pan or Dutch oven over medium-heat; put the herb bundle, ham, lamb, onion, garlic,
tomato and stock. Let it cook and bring into a boil. Reduce the heat and let it simmer for about 1
hour.
- Add and stir in the beans and sausage; continue to simmer for about 15 minutes. You can make it
longer depends on the consistency that you desired.
- Serve hot.
