Ingredients:

4 pounds ground lamb
1 (16 ounce) package linguine pasta
4 small potatoes, peeled and cut into ½-inch dice
1 whole head garlic, peeled and crushed
1 tablespoon onion powder
3 tablespoons lemon juice
2 tablespoons olive oil
1 ½ cups water
salt and pepper to taste
½ teaspoon ground cinnamon
½ teaspoon dried oregano

Cooking Instructions:

Prep time: 25 minutes
Cooking time: 1 hour

Cooking Steps:

  • Heat the oil in a cast iron skillet or Dutch oven. Add the ground lamb, onion powder and garlic; stir and cook until the lamb slightly brown and breaks apart.
  • Add the cinnamon and oregano. Stir in the lemon and let it cook until the liquid evaporates. More or less about 20 minutes.
  • Pour in the water and potatoes and bring into a boil then reduce the heat to medium-low. Let it simmer for about 20 minutes until the potatoes are soft and tender. Mash the potatoes to help thickens the sauce. Add salt and pepper and let it simmer until heavily thickened and all the flavors are combined; about 10 minutes. Stir frequently.
  • Boil salted water in a large pot and cook the linguine Al dente.
  • Plate the pasta into a serving plate and top with the lamb sauce. Garnish with parsley.
  • Serve hot.
