Lamb and Lentil Stew

Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that this type of cookware is capable of producing an amazing array of delicious meals. We have collected many Dutch oven recipes over the years and we hope you will use them to create some great meals for your family and friends.

A fast and easy stew for during cold nights when you want comfort food, but don't want to spend a lot of time cooking. This is surely an old favorite in our family recipe box!


1 1/2 pounds lamb shoulder arm chops, cubed, round bones reserved
1 (14 ounce) can diced tomatoes
1 cup lentils, picked over and rinsed
3 carrots, peeled and sliced
1 tablespoon olive oil
1/2 cup ricotta salata cheese, crumbled
2 cups chicken broth, or more as needed
1 teaspoon salt
4 cloves garlic, minced
1/2 teaspoon ground black pepper
1 onion, chopped
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon dried basil
2 cups coarsely chopped fresh spinach
1 lemon, juiced and zested

Cooking Instructions:

Prep time: 15 minutes
Cooking time: 40 minutes

Cooking Steps:

  • Using a cast iron pot or Dutch oven, heat oil and cook lamb cubes and bones on all sides, for about 3 minutes or until browned.
  • Sprinkle with salt and pepper. Add the garlic and onions and continue cooking for 2 minutes more. Stir occasionally.
  • Stir in the lentils, 2 cups of the chicken broth, tomatoes, carrots and the thyme, sage and basil. Then bring into a boil.
  • Reduce the heat after boil, cover and let it simmer until the lentils are slightly tender. More or less 15 to 30 minutes. Add broth is necessary.
  • Discard the lamb bones.
  • Add the spinach and cook 5 minutes more, add and stir in the juice and lemon zest.
  • Serve and garnish with grumbled cheese.
