Pork With Pepper Sauce

Over the years, we have amassed a large collection of Dutch oven recipes, and we enjoy sharing them with others who appreciate this form of cast iron cooking. The popularity of Dutch oven cooking has increased greatly over the past several years as many people discover the benefits of using these cast iron pots and associated pieces of cast iron cookware. Most of our recipes can be used for indoor cooking in your oven or outdoors in a more traditional campfire setting.

The pork fillet is marinated in brandy and then wrapped in prosciutto before being fried; you can make this overnight as the meat absorbed the marinade even more that makes the fillet juicy on every bite.  With a combination of a delicious peppercorn sauce; simple yet amazing dish!

Ingredients:

2 pork fillets, sliced to about 3cm thick
2 tablespoons mixed peppercorns, white, red, green and black
8 slices prosciutto
5 button mushrooms, sliced
1/4 teaspoon nutmeg
300ml thickened cream
2 teaspoons fresh thyme leaves
50g butter
3 tablespoons brandy
130ml white wine
1 pinch salt, to taste

Cooking Instructions:

Prep time: 10 minutes
Cooking time: 30 minutes

Cooking Steps:

  • Marinade the pork in a brandy for about 8 hours or overnight.  Meanwhile let the peppercorns steep in the white wine also for about 8 hours or overnight.
  • When done, remove the pork and warp in prosciutto, and lock with a wooden skewer.
  • In a large Dutch oven, melt the butter over medium heat. Add and cook the wrapped pork slices for about 5 minutes each sides or until brown on all sides.
  • Add the wine with the peppercorns, nutmeg, salt, mushrooms and let it cook for about 5 minutes until the wine reduced.
  • Add the cream and thyme then let it simmer until the sauce has thickened slightly. 
  • Serve with rice or new potatoes.
