Over the years, we have amassed a large collection of Dutch oven recipes, and we enjoy sharing them with others who appreciate this form of cast iron cooking. The popularity of Dutch oven cooking has increased greatly over the past several years as many people discover the benefits of using these cast iron pots and associated pieces of cast iron cookware. Most of our recipes can be used for indoor cooking in your oven or outdoors in a more traditional campfire setting.

Ask your children to help you prepare this wonderful recipe. Let them enjoy the fun of mixing the spices and pounding them on the hearth. This delectable meal is a keeper as the enticing aromas rise up as it cooked.

Ingredients:

2 c Vinegar
2 c Water
Marinade
6 lb Beef; bottom round
1/2 c Bacon Drippings
3/4 c Carrots; sliced
1/2 c Tomato Puree
1 c Red Wine
1 tablespoon salt
1 teaspoon cloves
1/2 teaspoon thyme
2 teaspoon peppercorns
2 teaspoon parsley Stems
2 ea bay leaves; small
1/4 cup clery Leaf; green
2 tablespoons garlic; crushed
1/3 c Carrots
1/4 c Celery
2 c Beef Stock
2 tablespoons brown Sugar
1/4 c Cornstarch

Cooking Instructions:

Prep time: 10 minutes
Cooking time: 4 hours and 15 minutes

Cooking Steps:

  • Using a stock pot put the water and vinegar; add all the marinade ingredients and place the beef. Cover, keep refrigerated and let it marinated about 3 to 4 days. Turn each side once every day.
  • Remove the meat from the marinade sauce and place in a roasting pan or you can use a Dutch oven. Add the bacon drippings and let it sear well until browned on all sides.
  • Using a cast iron pot mix the beef stock, wine, brown sugar, tomato puree, marinade sauce and bring into a boil over medium heat. Add the seared meat and; cover and let it simmer for 3 hours. Set aside the cooked meat before slicing.
  • Add the diluted starch with the strained gravy and stir carefully until boil. Add seasoning if necessary.
  • Slice the meat and serve with gravy.
