Smoked Turkey Soup
Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that
this type of cookware is capable of producing an amazing array of delicious meals. We have collected many

The combination of peas, carrots and potatoes definitely gives this soup extra freshness and flavor as the
smoky flavor of the turkey compliments with the vegetables. Best serve during dinner on winter nights with your
favorite bread and fresh greens.
Ingredients:
2 kg pre-smoked turkey legs
900g dried green split peas
1 medium carrot, peeled and diced
2 small potatoes, peeled and diced
1 tablespoon course ground black pepper
1 tablespoon dried parsley flakes
1 tablespoon olive oil
1 medium onion, diced
2 medium garlic cloves, diced
1.4 liters low/no-salt beef stock or chicken stock
2 tablespoons soy sauce
1 tablespoon dried basil
2 teaspoons chili flakes
1 teaspoon ground sage
1 teaspoon sea salt
2 bay leaves
250ml water, estimation
Cooking Instructions:
Prep time: 30 minutes
Cooking time: 50 minutes
Cooking Steps:
- In Dutch oven heat oil over medium-high heat then cook and saute the onion
until tender.
- Add the garlic and stir for 30
seconds.
- Add the peas, carrots, potatoes, stock, soy sauce, basil, black pepper,
ground sage, parsley flakes, bay leaves and salt. Stir frequently.
- Add the smoked turkey and enough water to cover all then bring into a
boil.
- Reduce the heat, cover and let it simmer for about 45
minutes.
- Remove the turkey legs and discard the bay
leaves.
- When the legs have cooled enough to handle; about 10 minutes and remove the
skin and bones then shred the meat, set aside.
- Using blender or food processor to blend the
soup.
- Add the turkey into the soup and stir to
combine.
