Traditional Brazilian Seafood Mocequa
Dutch oven cooking is as popular now as it was centuries ago and today’s cooks have discovered that
this type of cookware is capable of producing an amazing array of delicious meals. We have collected many
Dutch oven recipes over the years and we hope you will use them to create some great meals for your family and
friends.
This traditional Brazilian seafood dish based on coconut milk and fish broth is best served over rice or
with farofa (cooked manioc meal). Hint: Without the coconut milk it gives it a lighter, almost Mexican flavor and
is quite good as well. Truly versatile dish!
Ingredients:
2 pounds firm white fish, such as monkfish, cut into 2-inch pieces
1/2 pound medium shrimp, peeled and deveined
3 tablespoons dende oil (red palm oil), or canola
2 long, hot peppers, seeded and chopped
2 tomatoes, seeded and diced
1 1/2 teaspoons hot pepper sauce (e.g. Tabasco™), or to taste
1 onion, cut into 1/2-inch pieces
1 tablespoon minced garlic
1 red bell pepper, chopped
1/2 cup fish stock
1/4 cup chopped fresh cilantro
1 bunch green onions, diced
salt and pepper to taste
2 bay leaves
1/2 cup coconut milk
Cooking Instructions:
Prep time: 30 minutes
Cooking time: 30 minutes
Cooking Steps:
- Toss fish and shrimp together with salt and pepper to taste and set
aside.
- Using cast iron skillet or Dutch oven heat the dende oil over medium heat.
Add the onions and cook until translucent and soft. Add the garlic and let it cook until the onions are golden
browned.
- Add the tomato, stir and cook for 5 minutes. Add the red pepper, hot peppers
and continue cooking until softened. Pour in the fish stock, green onions, cilantro, hot sauce and bay leaves.
Bring to a boil over medium-high heat then reduce the heat and let it
simmer.
- Pour in the coconut milk then return the fish fillet. Simmer until the fish
is firm and opaque.
- Serve immediately
